Besides some great pasta dishes and salads, Bianconi specialises in pizzas, with a fine, crispy base and a remarkable selection of toppings and combinations. Among the finds here in Sligo is the della ruchetta, which combines a garlic and pesto base with a little mozzarella and sun-dried tomato, topped with rocket, bruschetta and feta - a great combination of warmth, creaminess, salty and peppery flavours.
